An Apple A Day Made Into Soup!


Every now and then a cold soup catches my eye. This recipe did; it contains ingredients that I have on hand already because I put them in my juicer daily for my morning or afternoon drink boost. It’s also almost identical in color to my Green Goddess juice recipe post I have shared with you.


Besides being a super easy, quick, and refreshing summertime meal, research has shown that an apple a day helps to keep 5 chronic diseases away; Neurodegenerative disorders of the brain, Stroke, Diabetes, and cancer.

  • 2 medium Fuji or Gala apples, cored and cut into 4 pieces

  • Juice of ½ medium lemon

  • 2 cups spring mix or spinach

  • 1 avocado, peeled and pit removed

  • 1 cup fresh mint leaves

  • 4 cups pure filtered water

  • Sea salt, to taste

In a blender, combine apples, lemon juice, greens, avocado, mint, and two cups of water. Blend until smooth, adding more water as necessary for desired consistency. Season with salt to taste.
